In Al-Arz (where the temple of King Solomon was built from the cedars of Lebanon) you can start a walk for as much as 50 miles. On the roads there are ample places to eat and sleep, but we suggest you organize with any church group so you can spend the nights at the many monasteries available. English is spoken by villagers, and water plus food are safe to buy. Best times springs (March/May) or autumn (September/November). You can reach Al-Arz by arriving at the Beirut airport: take a bus to the center of Beirut, then a bus to the city of Jounieh (35k north of Beirut on the coast), from there also by the same bus continue on to Byblos (where the first letter known to humanity 5000 years before Christ), and take a bus to the mountains. Lebanon is the only country where the mountains peaks (10,000 feet) are one hour drive from the beaches therefore you can ski and swim the same day.
