It's a great city for walkers and runners: lots of greenery, great landscapes, and most of the sidewalks are still black-top and not stone. My current favorite walking route starts at the Monastery of the Cross and goes alongside their park up to the Wolfson Towers. There I turn left (still alongside the park) and go up to the Knesset and the Israel Museum. At the Museum, I turn left and go downhill to the Botanical Gardens. I continue downhill through the Botanical Gardens (at the Givat Ram campus of the Hebrew University). At the bottom, I hit Herzog Road, where I turn left again (alongside another small park) and continue until I'm back at the Monastery (which is katy-corner across the street from my apartment). Total time: about an hour. A lot of bigger and smaller variations of this route are possible (90 minutes down to 20 minutes).
